Kale Citrus Salad!

WOWOWOW!!!! This salad is amazing! I saw this on the Pioneer Woman show on the Food Network and had to give it a shot. I will link the recipe below.  I will definitely be adding this to my salad rotation – especially during the Summer months. The creamy goat cheese pairs perfect with the zingy oranges and the spicy jalepenos! I highly suggest this salad- adjust it to your tastes and make it your own. I adjusted the recipe slightly.

*I used garlic salt instead of regular salt.

*I skipped the spoon of sugar

*I used oranges- for the dressing and for the actual salad

*I added walnuts

*I used my favorite Earthbound Farm boxed baby Kale from sprouts-no chopping necessary

Vegetarian Quinoa Chili!

Hey everyone, I have another recipe for you as promised. This one is a Quinoa Chili recipe I found through Pinterest and it’s delicious and VERY filling. Although it’s vegetarian, the quinoa and the beans pack it with LOTS of protein and meat lovers will not be disappointed with the taste! This recipe can also be made vegan if you use vegan sour cream and cheese or scratch them altogether.   I made it exactly as the recipe below calls for EXCEPT I doubled the amount of chili powder because I reeeeeaaally love my chili to be very chilly-y! I also added garlic salt as I do with all of my savory recipes. This tummy warming chili is absolutely perfect for the Winter and freezes well also!

Southwest Chicken Salad With Creamy Avocado Cilantro Dressing.

As many of you know, I love to cook- although it wasn’t always that way. I actually never really cooked up until about 5 years ago when I decided that I wanted to try more things at home.  Since then, I’ve become addicted to pinterest recipes and cooking shows as well. I share my meals on Instagram & Facebook and cook for friends often. The response has been overwhelmingly positive, which brings me to share the great news that I will now be sharing my favorite recipes on this blog. Don’t get me wrong fashion and beauty will always be my main focus, but some recipes are just too good not to share- So without further ado- here is my new favorite salad recipe!!!! I found a picture of a similar salad on Pinterest and had to recreate it!

Southwest Chicken Salad with Creamy Avocado Cilantro dressing.

Prep Time: 40 minutes 

Ingredients: 

For the Salad:

Place  romaine lettuce in a bowl- top with diced avocado, red peppers, corn, black beans, and chicken breast. Garnish with cheese.

*Romaine lettuce

*1 Avocado-diced

*1/4 Cup shredded cheese of your choice-I prefer mexican blend from Trader Joes.

*Corn on the cobb(2 ears)- Fire roasted, then cut off of the cobb.

*1 Can of black beans-drained

*1 Red pepper-fire roasted-diced.

*1 Large chicken breast-seasoned and diced.

Note: You can grill or pan cook the chicken. I used a skillet and seasoned it with cumin, hot chili powder, garlic salt, pepper and lime juice. I cooked the chicken on medium heat in about 1-2 Tbsp of olive oil and sprinkled the seasoning on both sides and squeezed lime on top.

Fire roasting; You can use a grill, Oven broiler or lay the corn & red pepper right on your(clean) stove top- YES right on the flame! (Be sure to stay close by and turn the veggies so they don’t burn)

 

For The Dressing:

Simply throw the following ingredients in a blender and blend until smooth. Taste dressing after adding garlic salt and pepper in intervals. (you can always add more, but can’t take away)

*2 Avocados

*1/4 cup sour cream

*1/2 Cup milk-or more depending on the consistency you prefer.

*Juice of 1 lime

*1/4 Cup Cilantro-loosely packed in a measuring cup (a small handful)

*3 Garlic Cloves chopped

*Garlic salt & Pepper-to taste

Note: This dressing would make a great dip for taquitos, southwest egg rolls, nachos- the list goes on and on. YUM!

New York City Eats & Sweets!

As you all know, the week before last I went to New York!!! I hung out with friends, shopped, and ate some really great food! Loads of really great food and sweets! I wanted to share some of my favorite spots with you all, so next time you’re in the NYC area, you too can partake in these delish spots!

Let’s start with the savory stuff. My favorite quick stop salad spot was a place called Chop’t!

IG14They make tons of different salads and chop them all together for you as you watch. Sounds kinda meh, but the salads were amazing!!!!!!

I also really enjoyed this great BBQ spot called Hill Country BBQ Market! I’m not too big on meat, but this place was SO yummy and had a fun atmosphere to boot!  (I didn’t get any pics,was too busy chowin’ down)

Quick Pizza joint in Brooklyn called La Bella Mariella was literally the best pizza I have ever had. The pizza I tried was called the Grandma and it was beyond any pizza!!!! This hole in the wall is easy to miss—-DON’T WALK BY!!!!! You will thank me!

My all time favorite Italian food spot was a quaint place tucked away in Nolita called Rubirosa! Oh My gosh it was amazing from start to finish! Our party had three different dishes and shared a pizza as well as desserts and EVERYTHING was to die for and bursting with FLAVOR! Fresh pasta, delicious sauces, great service, amazing desserts! This is great for romantic dates or just an evening out with friends. I will go back as often as I possibly can when I’m on the east coast!IG8

Now onto the SWEETS! I literally had sweets the entire time I was in the city. If you’re ever in NYC, these places are a MUST!

Momofuku Milk Bar: They have the greatest birthday cake truffles!! I was in heaven!

Ladurée Paris: Let me say that YES this place is totally overpriced! Now that we got that out-of-the-way, let me tell you, they make some of the most delicious macarons I have ever tasted! and many unique flavors as well. You can treat yourself to one sweet treat at a time or build a custom box. They come in a variety of sizes.

Magnolia Bakery: The BEST Banana Pudding EVER! I have no more words- it’s that good! There is a location in Los Angeles as well!
